- Baby eggplant 2
- Garlic infused olive oils- 1 teaspoon
- Pink Himalayan sea salt
- Red chilli powder- half a teaspoon
- Turmeric powder- half a teaspoon
- Cumin powder- half a teaspoon
- Crackedpepper- half a teaspoon
- Onion powder- (half a teaspoon) optional
Step 1 : Wash and diagonally slice the baby egg plant in the middle into 2 half’s .
Step 3 : Add all the above toppings in the exact measure given in the ingredients and spread with a brush or generoulsy rub with your fingers to coat each egg plant generously. Let it marinate for 15 minutes.
Step 4 : Next line a oven proof baking tray with aluminium foil , Grill in a pre heated fan forced oven for 10 minutes at 170 degrees C and grill at 160 degrees C for 45 minutes until it’s cooked through and slightly charred .
Step 5 :Finally, Top with your favourite toppings, I have used a drizzle of tahini , tzatziki , mashed avocado and garlic hummus (all store bought), I just added an additional drizzle of garlic infused olive oil in a tablespoon of all to make it spreadable, I also topped it with toasted sesame and freshly chopped cilantro and parsley.
